Yogi Bhajan’s Nut Curry Supreme

This is an almost perfect food for women. It contains almonds for the eyes, watermelon seeds for anaemia, walnuts for the brain and chillies for the intestinal tract. It can be served plain, with rice, chapattis or with pakoras.

Ingredients:

1 large onion chopped
4 garlic cloves finely chopped
1.5 inch fresh peeled root ginger finely chopped
1-2 green chillies
¼ cup ghee
3 rounded tbsp. chickpea flour
¼ cup lemon juice
2 tsps. turmeric
1.5 tsps. cumin
1.5 tsps. coriander
1.5 tsps. garam masala
4 cups yoghurt or buttermilk
1/8 cup peeled almonds
1/8 cup walnuts
1/4 cup cashews, pecans or apricot kernels
1/8 cup watermelon or pumpkin seeds
2 courgettes chopped

Method:

Mix ¼ cup yoghurt or buttermilk with chickpea flour and stir until it forms a paste. Then stir into the rest of the yoghurt or buttermilk.

Sauté onions and ghee until they are clear to golden brown. Add chillies, ginger and garlic and sauté until ginger and garlic are golden. Add turmeric and sauté on a low heat until golden brown. Then add other spices. Add yoghurt or buttermilk mixture. Then add lemon juice. Continue cooking on low heat. Add courgettes, nuts and seeds and continue simmering until courgettes are soft.
